Creamy Broccoli and Potato Soup

Hey Everyone! I hope you are having a great week and enjoying this BEAUTIFUL weather we have here in Edmonton. This week is a little bit busy for me. We are finishing our body-mind-spirit course and starting CHEMISTRY! (Wish me luck).

Anyways, I have been trying out all sorts of delicious recipes since I started my 12 week health challenge and wanted to share one I made this week. Its by Skinny Taste.  All of her recipes are so yummy! I would suggest checking out her blog as well.

Broccoli Cheese and Potato Soup

Ingredients:

  • 1 small onion, chopped
  • 1 medium carrot, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 2 tbsp flour (all purpose, whole wheat or ap gluten-free)
  • 2 1/2 cups less sodium chicken broth (or vegetable broth)
  • 1 cup fat free milk
  • 2 medium potatoes, peeled and diced small
  • 1/4 tsp kosher salt and fresh pepper
  • 4 cups (about 2 heads) broccoli florets, chopped into small pieces
  • 1-1/2 cups reduced fat shredded sharp cheddar
  • 2 slices 2% American cheese
  • 1 tbsp Parmesan cheese

Directions: 

Chop all vegetables into small bit size pieces

Add 1 TBSP butter or coconut oil with the celery, garlic, carrot & onion. Saute together till soft. 

Add the salt, pepper, and flour. ( I used whole wheat)

Add chicken broth milk and potatoes. Bring to a boil, cover and cook till potatoes are soft.

Add broccoli and Parmesan cook until soft before adding the cheese. Blend with an immersion blender.
