How many of you stare in your fridge and have no idea what to make for dinner? I know all about that! That is exactly what happens to me practically every night.😩
My solution: QUINOA SALADS!🙌
Quinoa salads are my go to meals on those nights. It's a great way to use up the old vegetables in the fridge before they all go bad from not knowing what to make with them... AND it's so easy! Just chop up whatever vegetables you have, make some quinoa, add a little lemon juice and olive oil and you are good to go!
This is my new favorite go to meal!👍
HERES HOW TO MAKE IT:
1-2 cups cooked quinoa (bring to boil twice as much water as quinoa, add quinoa, cover and simmer while you chop the veggies).
Chopped, diced, or minced vegtables (tonight I used onion, garlic, broccoli, orange bell pepper and purple cabbage, but whatever you have in your fridge will do). Slightly sautée so they are still a little crunchy. Add the quinoa and mix together.
Now I like to add some raw veggies, like cucumber, celery and kale, to cool the salad and add more crunch.
Mix together and add dressing!
How to make the dressing:
1/2 cup olive oil
Juice of 1 lemon
1 tbsp apple cider vinegar
1/2 tbsp dijon mustard
1/2 tsp salt
