Hey Everyone! I hope you are having a great week and enjoying this BEAUTIFUL weather we have here in Edmonton. This week is a little bit busy for me. We are finishing our body-mind-spirit course and starting CHEMISTRY! (Wish me luck).
Anyways, I have been trying out all sorts of delicious recipes since I started my 12 week health challenge and wanted to share one I made this week. Its by Skinny Taste. All of her recipes are so yummy! I would suggest checking out her blog as well.
Broccoli Cheese and Potato Soup

- 1 medium carrot, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 1 tbsp butter
- 2 tbsp flour (all purpose, whole wheat or ap gluten-free)
- 2 1/2 cups less sodium chicken broth (or vegetable broth)
- 1 cup fat free milk
- 2 medium potatoes, peeled and diced small
- 1/4 tsp kosher salt and fresh pepper
- 4 cups (about 2 heads) broccoli florets, chopped into small pieces
- 1-1/2 cups reduced fat shredded sharp cheddar
- 2 slices 2% American cheese
- 1 tbsp Parmesan cheese
Chop all vegetables into small bit size pieces
Add 1 TBSP butter or coconut oil with the celery, garlic, carrot & onion. Saute together till soft.
Add the salt, pepper, and flour. ( I used whole wheat)
Add chicken broth milk and potatoes. Bring to a boil, cover and cook till potatoes are soft.
Add broccoli and Parmesan cook until soft before adding the cheese. Blend with an immersion blender.
Its so tasty and easy to make. ( Adrian loved it!)
If you have any recipes you have been wanting to try, but needed a personal review first - Let me know! I will gladly try out any recipe and let you know if its good or not. I hate when I look up a recipe online and then it doesn't work out. :(
Take care everyone!
See you next week.
