Did somebody say tacos? Yes! Shrimp Tacos ;)

Confession: I would have tacos for every meal if I could.

Mexican food again?! I am on a role this week! Yesterday quesadillas, today tacos, and tomorrow enchiladas. :) These shrimp tacos are served with a tangy pineapple salsa. (I would recommend adding a creamy guacamole sauce or cilantro ranch on top, but other than that they were delish!)

1lb large fresh shrimp
2 cloves garlic
1tsp chili powder
Salt & pepper
(You can roast them on the bbq or just put some avocado oil in a pan and fry them.)

The corn tortillas are from the Mexican market on 118ave. (It's called Paraiso Tropical North -Latin Food Market) Just heat them up in a separate pan right before you are ready to eat. πŸ‘Œ

Pineapple salsa: 
1 pineapple diced in small chunks
1/2 red onion
1/2 red bell pepper
1/2 cucumber
Olive oil
Fresh lime juice
Sea salt & pepper
Mix together and enjoy!
