Okay, so I am an avocado fan, just like most people I know, but I did not realize how badly we here in Canada are missing out until I tried an avocado from Mexico. Seriously!! They are HUGE and so soft, ripe, and just the perfect texture. When I go to the grocery store here, I usually find two types of avocados: 1) So hard that I have to leave it on my counter in a bag for almost an entire week before it softens, or 2) So soft that by the time I get home and cut it open it is already brown inside.
There doesn't seem to be a happy medium when it comes to avocados being imported to Canada. So naturally, I didn't have too high of an expectation when I went to Mexico. The first day I was there, we went out to eat at a local restaurant on the beach called Karlas and we ordered some guacamole. Let me tell you, I almost dropped dead because of how delicious the guacamole was. If you don't believe me, I went back almost every single day I was there to eat their guacamole (now whether it is a good idea to eat that much avocado is another story), but it was honestly the best I have ever had. So I asked the chef how he made it so that I could share the recipe with all of you!
So here is the recipe! I made this one while I was in mexico so the texture was creamy and delicious, but since then I have made it in Canada where the avocados are not quite as fresh. The secret, I believe, in making the avocado creamy is to blend it before adding any of your other ingredients in. That is the only way I have found to get the texture as close to the real deal here in the great white north.
4-5 Ripe avocados
1 Tbsp - Fresh Lime juice
1/4 Tsp - Seal Salt
1/8 Tsp - Black Pepper
1/4 Tsp garlic powder
1/2 Tsp Chicken bouillon
1/4 Tsp Cumin
1/2 Red onion (diced)
1/2 Tomato (diced)
1/4 cup Cilantro (chopped finely)
Step 1 - Cut the avocado's in half, remove pit and scoop out the flesh into a blender. Add a tbsp of fresh lime juice and blend until smooth.
Step 2- Remove from blender carefully using a spatula. Pour avocado and lime mixture into a mixing bowl.
Step 3 - Add the salt, pepper, garlic powder, chicken bullion and cumin. Mix together well.
Step 4 - Fold in the chopped red onions, tomatoes and cilantro.
Step 5 - Enjoy with your favorite chip or cracker. Mine are Mary's Organic Crackers which you can find at Costco.
